Sensations
・Olfactory : great volume on the palate, refined almond, slender frame
・Gustatory : beautiful deep bitters, heady umami
・Trigeminal : enveloping and delicately spicy texture, beautiful astringency, resinous freshness (pine forest) and modulated finish

Pairings
・Red tuna tartare, tahini (sesame cream), roasted mustard seeds, lime
・Butternut ravioli, crabmeat with almond oil, aji amarillo sauce (sweet Peruvian pepper)
・Red bean soup sweetened with "mochi of the gods”

Terroir
The plain of Izumo - mythological high place that reference the oldest Japanese historical collections - is illuminated to the north by the Sea of Japan and to the east by the River Hii and Lakes Shinji & Nakaumi ... and the Chūgoku mountains, to the west by the river Kando and its tributary Shinnaito
The pure water, from the Kitayama Akiyoshiday chain, complements the nutrient fermentations of the sedimentary rocks it crossed.
The setting sun on the roof of the Izumo Taisha honden radiates, all around, a silent, perennial serenity.

Techniques
・Namazake junmai Nigori genshu
・Natural materials, kura with clay walls
