Terroir
Located in the heart of the southern part of the Japanese Alps, in the watershed of the 8 peaks of the Yatsugatake mountain range, Miyasaka House has two Kura: one historic in Suwa, which borders the lake of the same name and its geysers, the other 20 km further south, in Fujimi, at 1000 m of altitude
Spring water collected by wells to produce Masumi ‘mirror of truth’ sakes comes from the highlands of Kirigamine (for Suwa kura) and Mount Nyukasa (for Fujimi kura)

 

Techniques
・Maturation on lees without micro-filtration
・Exclusive selection of the historical yeast n°7 (1946), one of the most currently used in Japan for sake production
